With fall right around the corner, many of us might still have large amounts of summer cherries at home already needing to be put to a good use. A wonderful kicked up creation would be these do-it-yourself vanilla vodka infused cherries. They are simple to prepare, and make a great addition to your home bar offerings when hosting some guests for a party. The syrup that the cherries are in tastes delicious when used in cocktails.

There are a number of edibles to spruce up with using these infused cherries. Try it in cocktails, on top of ice cream, a grown up yogurt snack, or even in homemade baked goods. Imagine some mini hand pies with vanilla vodka cherries. These cherries are also devilishly good when served with cheesecake.

During the holidays, these would be a fantastic homemade gift that recipients will find to be both delicious and useful. Just jar some up and add a holiday themed tag with the date jarred and the ‘best by’ date. Your infused cherries should be kept in the refrigerator and will last or three weeks. They are sure to be a memorable hit with your friends and family this holiday season.

Vanilla Vodka Infused Cherries

Ingredients

– 1 ½  Pounds of Cherries

- 1 ¼ Granulated Sugar

- 1 Cup of Water

- 1 Vanilla Bean, Halved

- 1 Cinnamon Stick

- 1 Cup of Vodka

First, you will need to wash and drain your cherries. Removing the cherry pit is optional depending on your preference. You will also want to prep some jars by sterilizing them prior to canning. Next, mix the sugar and water together in a small saucepan. Stir the saucepan over low heat until the sugar is fully dissolved, then turn up the heat and bring to a boil.

Once boiling, add the cinnamon stick, and the vanilla bean halves. Let that simmer for five minutes and then remove from the heat. Finally, add the vodka. Fill your jars with cherries, and then top off with the vodka and sugar syrup. Seal the jars while the mix is still hot. Once the jars have cooled down, you can then store your jars in the refrigerator.
